Honey Roasted Vegetables

Honey roasted vegetables are a delicious and nutritious side dish that combines the natural sweetness of honey with the earthy flavors of roasted vegetables. The vegetables are typically tossed in a mixture of honey, olive oil, and seasonings before being roasted in the oven until they are caramelized and tender.

Ingredients:

  • 2 large carrots, peeled and sliced
  • 2 parsnips, peeled and sliced
  • 1 large sweet potato, peeled and diced
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 3 tbsp honey
  • 1 tbsp balsamic vinegar
  • 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the olive oil, honey, balsamic vinegar, thyme, salt, and pepper.
  3. Add the carrots, parsnips, sweet potato, and red onion to the bowl and toss to coat evenly with the honey mixture.
  4. Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and caramelized, stirring halfway through cooking.
  6. Remove from the oven and serve warm.
