Honey Lemon Quinoa Salad

Honey Lemon Quinoa Salad is a refreshing and nutritious dish that combines the nutty flavor of quinoa with a zesty honey lemon dressing. This salad is perfect as a light lunch, a side dish, or even a main course when topped with your favorite protein.

Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup crumbled feta cheese (optional)
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, bring the water or vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and let cool.
  3. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  4. In a small bowl, whisk together the olive oil, honey, lemon juice, minced garlic, salt, and pepper.
  5. Pour the dressing over the quinoa salad and toss to combine.
  6. Serve chilled or at room temperature.
